Pigeon or Dove Tortellini Ingredients

Dough

  • 10 ounces all-purpose flour (about 2 cups)
  • 2 eggs
  • 1 ounce water (about 3 tablespoons)

Filling

  • 3 pigeons or teal, or 6 doves
  • Salt, to taste
  • 3 tablespoons duck fat, butter, or olive oil
  • 4 large garlic cloves, unpeeled
  • 1/4 cup sweet white wine or sherry
  • A small pinch of celery seed
  • 1 teaspoon minced fresh rosemary
  • Black pepper, to taste

Sauce

  • 5 tablespoons unsalted butter
  • 1 tablespoon fresh rosemary
  • 8 juniper berries, mashed
  • Grated pecorino or parmesan cheese, for garnish

How to Make Pigeon or Dove Tortellini

  1. To prepare the dough, create a well in the flour and add the eggs and water. Scramble the eggs with a fork and slowly incorporate the flour until a shaggy dough forms.
  2. Knead the dough thoroughly for 6 to 8 minutes. Wrap it in plastic wrap and let it rest for 1 hour. If using a vacuum sealer, sealing the dough can instantly hydrate it.
  3. To make the filling, generously salt the pigeons or doves while heating duck fat in an ovenproof pan. Pat the birds dry and brown them well on all sides.
  4. Preheat the oven to 350°F. Add the garlic cloves to the pan and roast the birds for 30 minutes.
  5. Remove the pigeons and garlic from the pan and allow them to cool. Deglaze the pan with sweet wine or sherry, scraping up all the browned bits with a wooden spoon.
  6. Pick the meat from the birds and peel the garlic cloves.
  7. Place the meat and garlic into a food processor along with celery seed, rosemary, black pepper, and some of the pan juices. Blend into a smooth filling paste and season with additional salt if needed.
  8. Roll out the dough using a pasta maker or rolling pin until moderately thin. Cut circles approximately 3 inches wide.
  9. Place a heaping teaspoon of filling in the center of each dough circle and fold into a half-moon shape, pressing out as much air as possible. Moisten the edges with water if necessary.
  10. Bring the ends together to shape the tortelli. Place each piece on a baking sheet dusted with semolina flour or fine cornmeal.
  11. To prepare the sauce, melt the butter in a large pan and add the rosemary and mashed juniper berries. Keep over low heat to infuse the flavors.
  12. Boil the tortellini until they float, then cook for 1 additional minute.
  13. Transfer the cooked tortellini into the rosemary butter sauce and toss gently to coat.
  14. Serve immediately with grated pecorino or parmesan cheese.
