For the Alfajores

  • Healthy Alfajores Argentine recipe with dulce de leche
    1 1/2 cups raw, unsalted almond butter
  • 3/4 cup rice brown syrup
  • 1/2 cup maple syrup, agave syrup, or light brown sugar
  • 4 tablespoons powdered soy milk powder
  • 1 1/2 tablespoons vanilla powder or vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1/8 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 cup grated coconut

For the Dulce de Leche

  • 1 1/2 cups raw, unsalted almond butter
  • 3/4 cup rice brown syrup
  • 1/2 cup maple syrup, agave syrup, or light brown sugar
  • 4 tablespoons powdered soy milk powder
  • 1 1/2 tablespoons vanilla powder or extract
  • 1 teaspoon cinnamon

How to Make Healthy Alfajores

  1. Beat the butter and sugar until fluffy and creamy.
  2. Add milk and pureed tofu, then mix well.
  3. Add vanilla, brandy, and lemon zest. Mix thoroughly and set aside.
  4. In a separate bowl, whisk together the flour, cornstarch, salt, baking soda, and baking powder.
  5. Add the dry mixture to the butter mixture and work together with your hands until fully combined and the dough is soft. Do not add extra flour.
  6. Cover the dough and chill for 2 hours.
  7. Preheat the oven to 325°F.
  8. Line baking sheets with parchment paper.
  9. Divide the dough in half and keep one half refrigerated.
  10. On a floured surface with a floured rolling pin, roll out the dough to a thickness of 1/4 inch.
  11. Cut into 2-inch rounds using a cookie cutter and transfer to the prepared baking sheets.
  12. Repeat the process with the remaining dough.
  13. Bake for 12 to 15 minutes or until done. The cookies should be dry but not browned.
  14. To prepare the dulce de leche, combine all ingredients in a pot and cook over medium heat until the mixture pulls away from the sides. Using a double boiler can help prevent scorching.
  15. Remove from heat and allow the filling to cool and thicken before assembling the cookies.
  16. Once the cookies are cool, pair them according to size.
  17. Spread a dollop of dulce de leche onto the flat side of one cookie.
  18. Place another cookie on top and gently press until the filling reaches the edges.
  19. Roll the edges in grated coconut and place on a rack to set.
  20. Repeat with the remaining cookie pairs.
  21. Sift a light layer of powdered sugar over the Healthy Alfajores before serving.
