  • 2 parsnips, peeled and cut into chunks
  • 2 to 4 salsify roots, scrubbed and cut into 2-inch lengths (optional)
  • 1 or 2 roots of Hamburg or root parsley, cut into chunks (optional)
  • 3 tablespoons chopped parsley
  • Beer vinegar or malt vinegar, for garnish

How to Cook Roast Pigeon

Preheat the oven to 425°F (220°C). Place all the chopped vegetables into a small roasting pan and coat them with about half of the melted butter or olive oil. Season generously with salt and place them in the oven to roast.

Remove the pigeons from the refrigerator at the same time and allow them to reach room temperature for about 30 minutes. This step is essential for an even roast pigeon recipe result.

Stir the vegetables as they begin to brown. Meanwhile, brush the pigeons with more melted butter and season well with salt.

Clean the roasting pan and let the pigeons rest briefly. Then place them breast-side up in the pan and roast for 10 minutes.

Remove the pigeons from the oven and allow them to rest for 5 minutes before serving. Return the vegetables to the oven to reheat, tossing them with chopped parsley.
